Would like to hear some of your guys favorite no/low carb dishes that are simple and easy to make or where you guys go for your recipes.

Everyone usually has a favorite that they make.

Grilled chicken breast with Stubb's original BBQ sauce and a side of broccoli. Unoriginal, unsatisfying, relatively bland, but nutritious. I don't really have the time or patience to get fancy with food on a regular basis so I cook the basics in bulk (chicken breast, rice, veggies, etc) and measure out and reheat what I need for each meal of the day. Occasionally I'll make some serious chicken fajitas or fettuccine Alfredo for my lady and I to feast on but that really isn't low carb.

My quick go to meal are chicken breasts (cut to be as flat as possible), with a light spread of basil pesto, slice of tomato, and a little mozzarella cheese on top, baked uncovered at 400 for 40 mins... Minimal work required and tastes amazing.

I stole this from scope75, cut chicken breasts or tenders into bite size pieces, and mix it with alot of cut up cucumbers and you got a chicken cucumber salad.

I don't know why I am interjecting this, but here goes:

 

Several years ago we had a potluck at work.  I signed up to bring "Wet Willie Casserole".  Several people, brows furrowed, asked me what it was - in each case my response was something like "C'mon, everyone knows what Wet Willie casserole is, without it there wouldn't even be a Thanksgiving".

 

Of course, there is NOTHING called Wet Willie casserole.

 

What to do?

 

The night before the potluck  I just found a bunch of crap in the cupboard and mixed it all together.

 

When done, it was a delightful presentation of lime Jello, Mexi-corn and crumbled Vienna Sausage (I carefully added the crumbled sausage after the Jello started to congeal, so it was in various states of submersion - providing an almost vomit-like look).

 

I told my buddy at work all about this - and when I added it to the table, he said "Awesome, somebody brought We Willie casserole!"

 

We both had huge helpings - much to the mortified faces of everyone else.

 

That is a day I very proudly remember.

Pork loin butterflied then stuffed with onions, bell peppers, garlic, and jalape├▒o peppers then wrapped in bacon and baked
